Recipe | Vegan Mac n’ Cheese with Rice Paper Bacon

Yesterday I shared a recipe for how to make bacon with rice paper.

I was so excited to bring that recipe to the blog, and I’m even more excited to share a follow-up recipe for a killer mac n’ cheese that you can pair with the bacon! I’ve shared other mac n’ cheese recipes before, but this one is perfect.




Slightly smoky

Here’s what you’ll need:

  • 1/4 cup vegan butter (I used Earth Balance)
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups unsweetened almond milk (or any desired plant milk)
  • 1 1/2 lbs macaroni noodles
  • 2 cups vegan cheddar cheese (I used the Daiya brand)
  • 1 teaspoon paprika and pepper *optional
  • 1 cup vegan bacon bits (you can use the bacon recipe linked above or use an alternative if you wish!)

Preheat your oven to 375°F (190°C)

In a small bowl, combine the flour, salt, onion powder, and garlic powder. Set aside. In a large nonstick saute pan on medium heat melt down the butter. Once the butter is completely melted, add the flour mixture to the pan a small bit at a time while continuously stirring.

Once the mixture turns a light golden brown, add the almond milk and stir again continuously until the sauce begins to thicken.

Turn the heat down to medium low and slowly add the cheese while stirring to combine. Once the cheese begins to melt, add more cheese and keep stirring until all the cheese is melted.

Cook your macaroni noodles according to the box instructions until the desired tenderness is reached. Drain the noodles and save about 2 cups of the cooking water from the pot. Add the macaroni to the pan and stir well to combine. If the cheese sauce is too thick, add the cooking water slowly and stir.

You can stir in paprika and pepper (optional) to the mac n cheese for an extra kick. Sprinkle the bacon bits over the top. Put the macaroni inside the casserole dish and bake in the oven uncovered for approximately 30 minutes, or until golden and bubbly on top.
