Salad Recipe + Apps I’m Loving

Hey friends!

I was at the grocery store a few days ago and I bought some bags of mixed greens with the intention of using them for salads. The only problem is that I can never eat a typical “salad”. Some lettuce, veggies, and dressing just don’t make the cut for me. I wanted to get creative with my lunch today, so I made a salad that was loaded with hearty and filling ingredients, and packed with flavor.

So good!

Loaded Tex Mex Salad

You will need:

  • 1 cup of rice (I used jasmine rice, but use what you desire)
  • 1 cup of mixed greens (I used a bag mix)
  • 1 tomato
  • one red bell pepper, halved
  • half of an avocado
  • 1tbsp sriracha hot sauce, or 2tbsp of your favorite salsa
  • 2tbsp of any flavor of hummus (mine is roasted garlic)
  • chives and cracked pepper, for extra seasoning


Cook rice and add to a serving bowl. Add the sriracha or salsa to the rice and stir to mix together well. Add the mixed greens on top of the rice. Chop up tomato, red pepper, and the avocado. Place on top of the mixed greens, along with the hummus. Season with chives and some cracked pepper. Pretty simple, and so delicious. You can toss everything together or just dig in right away!

 Apps I’m Loving

Last night I was on my phone looking through the app store and found some cool apps that I instantly knew I would benefit from. Here are two of my favorite additions, and what I like about them!



This is an awesome design app that gives you a ton of different layouts, stencils, stickers, and text options. You can create anything from logos, postcards, and blog graphics, to facebook cover photos and business cards. It’s free right now too! Above I made a little promo for my instagram page, and I am happy with how it looks. 🙂



I know from working at Ulta that people come through the checkout all the time with their rewards card already in their phone, but I never remembered to take advantage of that ability until now. I’m sooooooo glad I did! I have a small wallet already, but I am definitely happy to make it even smaller. Downside, it only seems to work well with cards that have  an actual barcode… but I am still going to try entering some other barcode-less cards in manually and see if they get accepted!
