When it becomes time to restock the fridge I have several items that are absolute staples for me. If I (or my boyfriend) run out of any of these things we will start to order food. Unlike some people, I enjoy the activity of grocery shopping. I usually go with my boyfriend and we head to our local Aldi. Aldi is a discount supermarket chain that was founded in Germany and now has thousands of stores in 18 countries.
Not only do they have a great variety of food and other various items, but their prices are quite cheap. If you have an Aldi in your area I suggest you give them a visit!
My normal shopping list includes…
- whole wheat pasta
- a variety of canned beans, black beans, pinto, kidney, etc.
- tomato paste and crushed tomatoes (I make my own tomato sauce!)
- plain and vanilla almond milk
- vanilla soymilk (I use it for my coffee)
- peanut butter
- whole wheat and 12 grain bread
Those are most of the things I get at the grocery store. Occassionally I will get what I call “fancy vegan foods” that are more expensive. I think I’ll share a list of those products in a later post, with a recipe added perhaps?
Speaking of recipes, I am going to share an easy meal with you all that takes only a few minutes to get ready.
Spaghetti & Meatballs
All you need are three things!
A jar of tomato sauce, frozen meatless meatballs (the Gardein kind is my favorite), and a box of whole wheat spaghetti (or any spaghetti of choice). Cook the spaghetti until it is still semi firm, drain, add sauce and meatballs to the pot and turn the heat on low, stir and keep an eye on it until the meatballs are heated through and the spaghetti has cooked completely. I like to break the meatballs up into chunks with a spoon as they heat up.
And there you go!
I love to make this during the week so I can save some for lunch or dinner on the following day. It is so delicious and so simple.
